Baked Fried Rice n Cheese

Home alone today, so lunch would be 'lonely table just for one'! (A refrain from Engelbert Humperdinck!)

Grab a sandwich?

Instant noodles?

Wait a minute! There's leftover fried rice!

Let me work on it!

What I used and did:

1 bowl of leftover fried rice (It was corned beef fried rice)
Enough grated cheddar cheese
Sprinkle of oregano
Sprig of sweet basil (from my potted plant)

Place rice in a bowl and sprinkle some cheese before filling up with more rice.
Then top up with more cheese and some thinly sliced sweet basil.
Bake for 5 to 10 minutes.
I used the toaster oven as I didn't want to crank up my oven which would be wasting energy just for a little bowl!
It was good, it was sweet complement by basil!



Gosh! It is sooo good to be able to taste food!

Speaking of taste, I finally got to taste the chocolate cake I did.


Err.... while it had a melt-in-the mouth texture, I felt that something was missing which I couldn't pin it down yet. Have to eat more to find out.

Corned Beef-Hot Dog Fried Rice

After reading Mochachocolata-Rita's corned beef fried rice, I remembered I had some corned beef left in the freezer. I always deep-freeze unfinished food, even fresh chillies and ginger. I used to keep them in the fridge compartment and they perished within a couple of weeks. Now that they are frozen, they keep well for a long time. Just make sure they are washed before storing. There's a downside to it. The chillies will not be crunchy if eaten raw but they serve their purpose in dishes that need to be spiced-up. I got this idea from watching one of those food shows conducted by a young guy (can't remember his name).

So I decided to use up the leftovers - corned beef and hot dog.
And this is lunch.


What I used:

1/3 corned beef
3 hot dogs, sliced

1 medium-sized carrot, diced and parboiled
1 large onion, chopped
1 clove garlic, chopped
1 red + 1 green chilli, sliced

2 eggs, lightly beaten and seasoned with light soya sauce to make omelette

oil,
light soya sauce to taste or salt
pepper, either white or black
fried shallots for garnishing


What I did:

1. Prepare egg omelette and then slice to preferred size.

2. Saute onions and garlic in some oil for a minute and then add corned beef and fry for a couple of minutes.

3. Add in the rice and toss it about till well mixed.

4. Add carrot, chilli, hot dog, pepper and soya sauce to taste. Cover and let it cook for a while.

5. Lastly, add sliced egg and mix and then serve hot, garnished with fried shallots.

Corned Beef Fried Rice


Tonight we had corned beef fried rice for dinner. It's again a one-dish meal whipped up in a jiffy with finely grated carrot, chopped vegetables, sliced onions, chopped garlic, eggs, sliced chilli and of course one-third of corned beef from the can. That settled the dinner for three.

Wholesome Fried Rice




Ingredients:

2 bowls of leftover cooked rice
Half a carrot, shredded
2 string beans, sliced thinly
2 pieces of 'bak kwa' cut into strips
1 large white onion or any type of onion, chopped
1 clove garlic chopped or minced
Omelette from 2 eggs, shredded
Oil
Salt, pepper to talste
Sliced red and green chilli (optional)
Fried shallots and parsley for garnishing

Method:

1. Heat oil and stir-fry onion and garlic for a minute.
2. Add in the carrot and string bean and season with some salt and cook for a few minutes.
3. Next, add in the 'bak kwa' and sliced chilli and the rice.
4. Fry for about 5 minutes and then add in the omelette.
5. Fry until all the ingredients are well-mixed, add salt and pepper to taste.
6. Serve garnished with fried shallots and parsley.
