Steamed Yam Cake

Another one for the ladies' meet.


Ingredients:
300g yam, cubed
250g rice flour
1 tablespoon tapioca flour
1 litre water

3 pieces dried mushrooms, soaked and sliced
100g chicken meat, chopped
40g dried prawns, soaked and chopped coarsely
60g shallots, sliced
2 tablespoons oil
salt, sugar to taste

For garnishing:
sliced red chilli
fried shallots
spring onions
coriander leaves


1. Mix 500ml water with rice flour and tapioca flour and set aside.

2. Heat oil and saute shallots till fragrant and add in chicken, dried prawns, mushrooms and stir fry for a while.

3. Add yam cubes and water. Cover to cook yam till slightly soft. Add seasoning to taste.

4. Stir flour mixture and add to yam and stir immediately to mix well as it thickens.

5. Pour into a greased 18-cm tin and steam for about 45 minutes.

6. Cool before removing from tin. Garnish and serve with chilli sauce.

    Thanks for dropping by. My friends and daughter prefer the yam cake. I, too prefer the yam cake. I couldn't get the purple type which I like the cake to have a light purple hue to it. So I merely bought the pale type from the market. I would usually check with the seller and ask for the type that loosen up easily after steaming, in hokkien it's the word 'sung'. Some yam can be 'hard' after cooking and doesn't 'crush-in-the-mouth' type. Hope this helps.

  5. Just to confirm, 500ml water is added to the flour and the balance 500ml water is added to cook with the yam?
    Can i use 1 Tbsp cornflour instead of 1 Tbsp tapioca flour? Thk you,BusyGran.

    Yup, 500ml to yam and 500ml to flour, but do be quick to mix when adding the flour mixture after thorough stirring just before pouring in. I have not tried using cornflour, but I don't think it will affect the cake much.

  9. I have trusted the seller but so far still being disappointed. To get a good yam is like striking lottery. Looks like your seller did a good job in selecting a good yam for you. Your yam cake looks delish!

  12. Loverly! There's another type of yam that's a bit roundish and shorter. Seems this is soft and 'fun', powdery type, from Thailand. Yam is my favourite too!
